warm brussels sprouts salad.

we love brussels sprouts, yes we do!

for the past few weeks my mother has been raving about an amazing salad she regularly get in her hometown out west. so when she visited a few weeks ago, we took a shot at our own version of her fave new dish. i had never had a warm brussels sprouts salad, but being a huge fan of the green little goodies i’m always up for new ways to enjoy them. turns out, this is a super easy {and super delicious} meal that’s sure to please. feel like staying on the lighter side? ditch the bacon, or swap it out for turkey bacon, it’s still just as good!

recipe:

finely cut brussels sprouts & shallots

sauté brussels sprouts & shallots with olive oil & salt & pepper to taste

hard boil 1 egg per serving

fry 2 pieces of bacon per serving {we like our extra crispy}

quarter hard boiled egg & crumble bacon

add bacon & eggs to  sautéed brussels sprouts

drizzle in olive oil & balsamic

add salt & pepper to taste

family dinner.

yay for three day weekends! this past weekend was spent with family {my two sisters were in town} and good friends {the bff made the long haul from the big city to the ‘burbs} and lots of good food. and a little bit of champagne.

we had a few family dinners, the first of which was done primarily on the grill. we stocked up on fresh seafood- lobster/crab claws/shrimp/clams- added some olive oil, threw in our favorite veggies, and had a mixed grill feast in no time. my sister tossed hers with some straight up pasta… which was pretty life altering. i foresee a lot of this grilling come summer, and it’s making pretty excited.

this past saturday my boyfriend surprised me with an impromptu date night.  he asked that i be ready to go at 7, and that i bring my camera… never one to wait for surprises, i immediately embarked on a sea of questions and took to the internet to see if i could find any special events going on downtown. although my efforts to ruin my own surprise were ultimately fruitless, i was pleasantly surprised to find that this date night would be a low-key {albeit, delicious} one.

turns out, he decided to take me to the burger bus… our local mobile food pioneer that i have wanted to try for some months now. and i have to say, it was worth the wait.  the menu was unique, yet sophisticated. the meat was fresh, local, & delicious. and the fried pickle chips were everything they should be: sweet, salty & served with the best ranch i have ever had.  my only regret? although i loved the spicy chipotle burger, i wish i had tried the cb & j {their signature cheese burger with jelly}. i hear it is absolutely amazing, for those adventurous enough to try!

last night i cooked dinner for my sister, boyfriend, & friend… i wanted a to serve something easy, but still delicious & guest-worthy.  it was the perfect opportunity to try out this recipe from the august/september issue of fine cooking magazine. the combination of gruyere, fontina, parmesan & prosciutto lends a sophisticated air to a tried & true favorite.  needless to say, plates were wiped clean… and the fries weren’t too bad either!
