warm brussels sprouts salad.

we love brussels sprouts, yes we do!

for the past few weeks my mother has been raving about an amazing salad she regularly get in her hometown out west. so when she visited a few weeks ago, we took a shot at our own version of her fave new dish. i had never had a warm brussels sprouts salad, but being a huge fan of the green little goodies i’m always up for new ways to enjoy them. turns out, this is a super easy {and super delicious} meal that’s sure to please. feel like staying on the lighter side? ditch the bacon, or swap it out for turkey bacon, it’s still just as good!

recipe:

finely cut brussels sprouts & shallots

sauté brussels sprouts & shallots with olive oil & salt & pepper to taste

hard boil 1 egg per serving

fry 2 pieces of bacon per serving {we like our extra crispy}

quarter hard boiled egg & crumble bacon

add bacon & eggs to  sautéed brussels sprouts

drizzle in olive oil & balsamic

add salt & pepper to taste

truth be told, we were pretty much all moved & settled in within minutes of signing our lease. we had a pretty efficient move-in system- unpacking boxes as they came… not to mention a huge crew of family & friends that made it one of the easiest moves i’ve ever made. now, a little more than 2 months later, i feel so at home in this apartment… except for one little thing. we seem to be lacking in the wall-decor area, for a bevy of reasons including: laziness, lack of inspiration, & an inability to agree on what will grace these blank walls. suggestions welcome, and in the meantime, here’s what i’m thinking…

fireside dreaming.

it’s cold here in connecticut. like really, really cold. possibly the coldest it’s been since i moved here almost 1 year ago. and while i wouldn’t trade my move or home here for the world, this weather is leaving me a little nostalgic for the perpetually comfy climate of my life in santa barbara. until we can sneak away for a mini vacation to my old stomping ground, i’ve taken to a fireside virtual stay-cation- perusing images of some of my favorite places from the comfort of my flannel pj’s, ugg slippers & hot tea. on my mind right now? san ysidro ranch, one of my favorite tucked-away havens {not to mention honeymoon destination for jfk & miss jackie o}…

family dinner.

yay for three day weekends! this past weekend was spent with family {my two sisters were in town} and good friends {the bff made the long haul from the big city to the ‘burbs} and lots of good food. and a little bit of champagne.

we had a few family dinners, the first of which was done primarily on the grill. we stocked up on fresh seafood- lobster/crab claws/shrimp/clams- added some olive oil, threw in our favorite veggies, and had a mixed grill feast in no time. my sister tossed hers with some straight up pasta… which was pretty life altering. i foresee a lot of this grilling come summer, and it’s making pretty excited.
